Kiwi Chicken Salad-Foodie Friday

     I was going through my recipe box last week looking for something different (and cool) to make for dinner. I found my recipe for Kiwi Chicken Salad. I had forgotten how good it tastes and how pretty it looks. Enjoy!


Ingredients:

4 cups cooked chicken shredded ( I prefer to boil boneless skinless chicken breasts with 1 tsp. of rosemary and a pinch of salt, but you could use any cooked chicken)
1 small green or yellow pepper, chopped
1-11 oz. can mandarin oranges, drained
1/2 cup mayonaise (I used light)
3 Tablespoons slivered almonds, toasted (you can see how to toast nuts on this post)
1 T. lemon juice
2 kiwi, peeled, sliced lengthwise and then cut each slice in half
salt and pepper to taste



Cook chicken until very tender. Drain, cool and shred.


     Add pepper, oranges, lemon juice, almonds and mayonaise and stir gently. Add kiwi, salt and pepper and mix. Chill until ready to serve. My husband likes his in a sandwich. I prefer mine with a little bit of lettuce and crackers.

Yum--sounds great. I no longer do mayo except for a 1/2 tsp here and there---but it surely looks wonderful.

I would have never thought to put kiwi in there but it looks absolutely scrumptious! I'm with you...give me a bed of lettuce & some crackers with it any day. Now I'm hungry...again!

I'm still cooking down tomatoes. We had Wives with Knives roasted tomato soup last night. OMGosh, is it good!!

Salads interest me a lot as I am on diet, and salads take up a large part on my menu. Your kiwi chicken salad looks very tempting to me (without the mayonnaise). As usual, your arrangement of the food on the plates , and the pictures of it are awsome.

To answer your question re my cupcakes in the header:

The roses were made using the Wilton 2D tip & buttercream icing.

You start in the CENTER of the cupcake & just move the tip outward in a circular motion. Very fast & easy!

I've never thought to put kiwi in chicken sald but it looks really good and the color is nice. It's a fruit I don't eat nearly enough.
