Strawberries with Vanilla Mascarpone Cream & Balsamic Syrup-Mom Update

     I'm sitting in my mom's hospital room, she is sleeping and I finally felt like posting something that wasn't crisis related. Luckily, I took a few pictures last week and never had a chance to post them. Mom continues to make progress. She still isn't eating much, but we have been bringing in things that sound good to her and she will eat a few bites of fresh fruit, plain bagel etc. I think she will have to go to a rehab location to get her strength back when she leaves the hospital. She's just been flat on her back too long and had such trauma that standing up is truly more than she can do, although it was easier today than yesterday. She has some work ahead of her to build her strength back. Once that happens, she can begin treatment for her other issues. Once again, thank you all so much for the prayers and encouraging messages. It helps more than you can ever know.


     Mascarpone Cheese is considered a "sweet cheese" but it isn't sweet. It really tasted like very thick heavy cream on its own, but was delicious with a couple of simple ingredients added. My husband loved this, even though he wasn't exactly sure he would when he watched me making the ingredients. It is pretty enough for company, and easy enough to make for family. Enjoy!



Ingredients:
Sliced strawberries
Container (8 oz) of Mascarpone Cheese
Powdered sugar (about 1/3 cup)
2 tsp. vanilla

1/3 cup sugar
1/4 cup balsamic vinegar

In mixing bowl, whisk the cheese with the powdered sugar and vanilla until well blended. Keep in refrigerator until ready to use.

In small saucepan, mix sugar and balsamic vinegar. Bring to a simmering boil, and cook down until it becomes slightly thick. (I did this about 10 min. at a very low simmer). Set aside until cool. It should thicken to the texture of corn syrup as it cools. I have found that if you have a high quality balsamic vinegar, you don't even need to make the syrup...you can just add a splash of the vinegar on top of the cheese mixture. If you cook the balsamic syrup too long...it turns to almost a sticky, hard candy texture.


In wine glasses, parfait glasses or bowls; put in a serving of sliced berries, top with a dollop of the cheese mixture and drizzle with balsamic syrup.

This seems like a very interesting mix of flavors. It would be a fun dish to try.

I pray that your mom will continue to gain energy each day. I'm thankful that you are finding things that sound good for her to eat, that seems like a big hurdle in and of itself. Are you able to stay for her recovery?

Sue, please forgive me for my tardiness in prayers for you and your mother, but I have been gone with computer access only when I could borrow one from a friend. I didn't know. But I do now, and I have just prayed for her and for your family.

I know how terrifying it is to have a parent in the hospital and be given such dire predictions, and my heart goes out to you. But I rejoice with you in your mother's continued recovery! :-)

I will be gone from my blog for an extended time due to maintenance things I have to supervise on our getaway in order to get it ready to show to a potential buyer. I just posted requesting prayer as well, so I would appreciate any and all prayers in our direction.

Here's hoping that your mother gets stronger and stronger with each moment's passing. Email me if you wish. I'm in Florida, and if she's within accessible driving distance, I would be glad to try and help if you need something.

What can I say..., hang in there (and pray)..., as to the fab food, I tried two new recipes this weekend, and they both did not turn out well at all.

It's great that you can have your computer with you... a little personal enjoyment waiting in the hospital is nice for you!
Recovery seems to be in view... it may take some time... but it seems to be in sight~

Sue, if this is something your mom could enjoy, I'm sure it will help her recovery!!

I'm glad to hear she is improving. We went through a crisis with my mom in November 2008, and I remember how frightening it was. Best wishes to you all.

Oh, no, no..., they were not your recipes! It just happened tonight (for the second time) so I guess I just "vented" in the comment. It was a souffle that didn't rise! I'm going to try something else next weekend -something easier!

I'm happy to hear that your mom is steadily improving. Glad to see you posting. Since having Maddy, I really haven't cooked like I used to. I just make the basic dinner, so I think it's time I become a "foodie" like you.

What is a beautiful dessert. Really yummy looking. Sounds like a bit of improvement each day with your Mom. Be sure to take care of yourself, too, Sue.
