Saturday we took a trip about an hour south to visit our favorite peach orchard. The peaches this year are plentiful and delicious! Of course I bought too many, but is there anything better than a fresh peach? I just can't help myself!
I filled a big basket on my kitchen counter with SOME of the peaches. We've eaten them with yogurt, in last night's shortcake and today I decided to try a new recipe for sorbet that I had saved from Eating Well website.
Peach-Lime Sorbet
1 1/2 cups water
2/3 cup sugar
2 tablespoons light corn syrup
4 fresh peaches, peeled, halved and pitted
1 teaspoon freshly grated lime zest
6 tablespoons lime juice
1/4 teaspoon salt
Pour the fruit-syrup mixture into a blender. Add lime zest, juice and salt. Be careful when using the blender and hot liquid. Either blend in two batches or hold the lid tightly in place when you puree the mixture.
Puree until smooth. Pour into a 9 x 13 pan and refrigerate until cold, about 4 hours.
Freeze the sorbet mixture in an ice cream maker, according to the manufacturer's directions or pour the mixture into ice cube trays and freeze until solid and chop in food processor. I actually think you could just freeze in ice cube trays and put them in a glass and eat them.
Can I just say that this is delicious!
It was easy and so refreshing.
I will be making this again before the week is over!

ReplyDeleteI've been eating two or three peaches everyday for weeks. Your sorbet looks delicious and if I can get more limes before this batch of peaches is gone I'm going to make some. Of course, I can always get more peaches. Living in Georgia is like a dream come true for this peach lover. I could never get good ones where I lived in Florida, but here they are plentiful.

ReplyDeletePeaches are a gift from Heaven in my opinion! Love them so much...and this looks so good. My daughter and I went to see Eat, Pray, Love today and then had lunch at the Cheesecake Factory. I found a drink called "Georgia Peach" on the menu and it was scrumptious! Vodka, peach schnapps, peaches & raspberries...almost frozen and just perfect. Light and refreshing on such a hot, hot day.
