Need A Little Sauce For Those Wings? Blue (Bleu) Cheese Dressing-Foodie Friday


     I was lucky enough to briefly have a professional chef for my next door neighbor. He prepared wonderful meals and he was very willing to teach me some of his recipes. He only lived next door for 2 years, but we had some great meals with him. One of my favorite "Kevin recipes" is for Blue Cheese Dressing. It wasn't something anyone at my house liked...until we tried Kevin's recipe. It is easy to prepare and is delicious served with chicken wings, salads or as a dip for chips or veggies.



Ingredients:
6-8 oz. Blue Cheese (I made mine with 5 oz. today-it was what was available at my store)
8 oz. Real Mayonnaise
4 oz. Sour Cream
3 oz. Buttermilk (this is one time that the milk/vinegar substitute just doesn't work)
1 1/2 T. Vinegar (Kevin prefers red wine vinegar, I used white vinegar)
pinch of salt
pinch of pepper



Put half of the blue cheese into the blender or food processor, reserve the rest for later. Add all of the remaining ingredients and blend until smooth.


Add the remaining blue cheese.

 

Stir and chill. Enjoy!

I would like to say thanks for sharing the recipe - BUT - Sorry! I don't care for blue cheese! Believe me I have tried. I just don't care for strong cheese or strong fish. :(
I know many others will appreciate the recipe tho.

Sounds very good. I like bleu cheese, but J doesn't. Perhaps I will try this on and see what he thinks.

Sue, You crack me up... Wayne and I got a good chuckle when you thought Ken was a lion!
Neither Wayne or I enjoy blue cheese, so we will have to pass on this one, however it makes me wonder if we could exchange the blue cheese for something else?... :-)!

I will soon try making your blue cheese dressing! I have powdered buttermilk in my pantry but I'll make it with the fresh stuff, your way, at least for the first time.
How lucky to have had a prof-chef next door!

A little story: Art Modell's (former owner of the Cleve.Browns) wife was at a taste testing for a charity event, the committee for which we were both on. I raved about this restaurant's food & someone said "Oh, they give lessons, you know!" I said "I would LOVE to get a gift from my husband for a series of cooking lessons from here!"

Mrs. Modell peers over her glasses at me & says in a deep, husky voice "I'd kill him!!" LOL
Of course, she even had a caterer prepare all their meals for their private plane. :/

I'd rather have the fun of making it myself.

This looks amazing. You could then it out a bit and use it for salad dressing, too, couldn't you? Yum. I am starving now.

Actually, that looks pretty good. Buttermilk! Think I'll try it. PS there is nothing better than a bit of blue cheese with a Bosc pear.

I can't believe how many said they don't like blue cheese. Me? I LOVE it! In California I could buy Bob's Famous Blue Cheese Dressing at the store, but not here and let me tell you I haven't found anything to compare. BUT, this recipe looks yummy and chunky, just like theirs! I will definitely be making this (with the full 8 oz.). I can't tell you how excited I am to find this recipe Sue, thanks for sharing!

My poor husband has to miss the SuperBowl for a work committment - can you believe it? Maybe I will make chicken wings for him to come home to and watch it on Tivo.

I love cooking with buttermilk, but why is it that you can never find it by the pint, only by the quart or even half-gallon?

Also, thank you for letting me know about my blog's slow loading time. I thought it was only me and my hiccuppy laptop (and Bandwidth's using the bandwidth). I reduced the number of posts per page to 2. Though I think those slides and polls may be the culprits.
